Whole wheat Spaghetti

I’m sure each one of you would have had those days when you are really tired, not in the mood to cook, you did not find time to stop by at a take away to pick dinner, want to skip dinner, but then the thought of been woken between because you get hungry in your sleep is disturbing isn’t it?.  Those days you just feel like eating a small portion and crash on your bed. This is just the thing.Usually all the ingredients are easily available and lying there in your fridge.

On days like these, I let the spaghetti cook on the stove and quickly wash up. By the time I have freshened up, the spaghetti is almost cooked. Put some olive oil in the wok and quickly fry the bacon bits and toss in the drained spaghetti and then add the egg milk mixture, there it’s done.. gobble it up and hit my bed.

Whole wheat Spaghetti with Bacon

Ingredients: (Serves 2) Preparation Time: 15 mins
Bacon strips – 3, chopped into bits
Garlic cloves – 2, medium-sized, finely chopped
Milk – 30 ml
Eggs – 2, beaten well
Whole wheat spaghetti – 160 gms
Olive oil – 1 tbsp
Crushed black pepper – half a tsp or less or more depending on your taste
Dried Basil powder – a pinch
Salt to taste

Method:
Put the spaghetti into a pot of boiling water, along with some salt and little oil. Cook it as per the instructions on the packet. Usually it should be cooked in 10 – 12 minutes.

When there is about 5-8 minutes for the spaghetti to get done, heat oil in a wok/ frying pan. Set the heat to medium. Once the oil is hot add the bacon bits and fry them, when they begin to turn reddish brown add the chopped garlic and sauté it for about 30 seconds.

Add the milk to the beaten eggs, mix well and keep aside. You can also use cream instead of milk.

Now the spaghetti should be ready, drain the water out and add it to the wok. Mix well. Check salt and adjust it to your taste. Add the pepper mix well.

Turn off the heat. Now add the egg & milk mixture. Keep mixing well so that the egg doesn’t stay at the bottom and get cooked. It should lace the spaghetti well and should cook from the heat of the spaghetti.

Garnishing:
Garnish wit the dried Basil. Add some Parmesan cheese powder if you wish to.

Serving Suggestions:
Serve hot.
