Lemon Flavoured Rice


Guess its the lemon season for me.. I don’t know why, but recently been posting lots of recipe’s involving limes and lemons..

This is again one of the different types of flavoured rice that you can get to eat in Southern part of India. Just like the Mint flavoured Tomato Rice I had posted a while back. This is quick. Can be also made from left over rice. But the recipe I have posted today is on how to make it fresh. I will post the recipe on how to make lemon rice from left over rice soon.

This is popularly eaten in South India for breakfast and lunch too. Many carry it in their lunch-boxes as its quick. You even get ready-made pastes to add to rice back in India.

Lemon flavoured Rice

Ingredients: (Serves 3) Preparation Time:15-20 mins
Raw Rice – 100 gms washed, drained and kept aside
Onion (optional) – 1 medium-sized, chopped finely
Pink raw groundnuts – about a handful
Urad dal – 2 tsp
Whole Cumin/Jeera – 2 tsp
Mustard Seeds – 2 tsp
Curry Leaves – 1-2 sprigs
Coriander Leaves – 3-4 sprigs, chopped finely
Green chilli’s – 2-3 medium-sized, slit
Dried Red chilli – 1, broken into 2
Lemon – 1 medium-sized
Ginger – about an inch, chopped finely
Turmeric powder – half a tsp
Salt to taste
Oil – 4-5 tbsp

Method:
Heat oil in a pot set to medium heat. Add mustard seeds and let them splutter. Add the green chilli’s and fry them for a minute to let the spice diffuse into the oil. Add the dried red chilli and fry for a few seconds. Add the Cumin seeds, urad dal and fry for a minute till they start turning slightly brownish. Add the ginger and fry for a minute or so. Next add the groundnuts and fry till they turn slightly brownish. If you wish to add onions, add them now along with the turmeric powder and fry till the onions turn transparent. Also add some salt to flavour the onions. This will also reduce the time required for the onions to fry.

Now add the curry leaves and raw rice and fry for a minute. Add double the measure of rice used. Add salt to taste. Mix well. Close the pot with its lid when the water begins to boil. Reduce the flame and cook for about 10-12 mins.

Take off heat and let the rice cool. Squeeze the lemon juice into the rice. Mix well and check if more lime juice is required. The rice should have a distinct lime flavour.

Garnishing:
Garnish with chopped coriander and serve.
