Mushroom Wraps


Wraps are easy to prepare and you can fill them up with just about anything. I make these often as they are quick and are easy to eat and non messy.

They are easy to carry with you too for a picnic, lunchbox or snack etc. When I pack this for Keshav in his lunchbox I keep the filling and the tortilla separate and ask him to put it together before he eats as it can get soggy because of the sauce.

Try them.. kids will love them. These are non spicy and Jalapeños are the only thing that add some heat to it.

You can also make the same with some shredded chicken, turns out yummy as well.

Ingredients: (Serves 2) Preparation Time: 15 mins
Tortilla wraps – 2, medium-sized
Mushrooms – closed cup, 3-4 diced
Garlic – 1 large clove, finely chopped
Onion – 1 medium-sized, chopped
Lemon juice – half a tbsp
Red Pepper – half of a medium-sized pepper, chopped lengthwise
Bay Leaf – 1 small
Tomato Passata – 100 ml, you could use tomato puree as well
Jalapeños – 4-5 medium-sized pickled slices, finely chopped
Olive Oil – 1 tbsp
Salt to taste

Method:
Making the filling for the wrap:
Heat oil in a frying pan set to medium heat. Add the bay leaf and fry for about 30 seconds. Add the chopped garlic and sauté for a few seconds, they need to remain white don’t burn or brown them. Add the chopped onions and sauté them for a minute or so. Add the Passata and some salt to taste, mix well and cook on low flame for 3-4 minutes. Add the diced mushrooms and cook for another 3-4 minutes. Once the passata starts to thicken and the mushrooms are cooked remove from heat. Remove the bay leaf. Let the filling cool.

Once the filling has cooled add the chopped jalapeños, red peppers and lemon juice, mix well.

Heat the tortilla in the microwave for about 10 -15 secs. Add one half of the filling to the centre of one tortilla, fold the bottom and roll it into a wrap. Prepare the other one in the same way.

Serve immediately.

Alternative you can have the wrap hot. As soon as the filling is ready add the chopped jalapeños, red peppers and lemon juice, add to a heated tortilla and serve.

Serving Suggestions:
You can serve along with some sour cream on the side. I was out of sour cream 😦 so my wrap is not served with sour cream.
