Creamy Egg Pasta


This is one of Keshav’s and my favourite… its creamy… not too high on the calories because there is no cheese.. 😉 and yet very filling.. and quick.. that’s the beauty of pasta.. :D.. try it out… kids and adults all will love it…

Also the jalapeños give a nice pungent flavour to this pasta dish.

Creamy Egg Pasta

Ingredients: (Serves 2) Preparation: 15 mins
Pasta – 50 – 75 gms, any shape you want..
Tomato puree – 150 – 200 ml or 2 medium-sized tomatoes-finely chopped
Fresh Parsley – 3 or 4 leaves, finely chopped
Garlic cloves – 2 or 3 medium-sized finely chopped
Onion – 1 medium-sized, finely chopped
Black peppercorns – 3 or 4 freshly crushed
Jalapeños – 5-6 slices, finely chopped
Red/yellow/green peppers – half of a medium-sized pepper, chopped into small squares as shown
Fresh Cream – 3 tbsp
Olive Oil – 2 tbsp
Egg- 1
Salt to taste

Method:
In a big pot of water to boil. Add enough salt and half a tbsp of olive oil to it. Add the pasta and cook the pasta based on the instructions given in the pasta packet. It may vary. I took 10-12 minutes to cook my pasta. Once the pasta is cooked immediately take the pot off the heat and move the pot under running cold water and let the pasta cool.. then drain the pasta. This is to prevent the pasta from cooking further and becoming gooey.

Heat oil in a deep, fry pan set to medium heat and add the chopped garlic pods and sauté for a few seconds. Add the chopped onions and sauté for a half a minute. Add some salt and mix well. Now add the tomatoes/tomato puree. Reduce the heat to low. If you have added chopped tomato then make sure it is cooked till it turns into puree, (better to use puree as this quickens the cooking). Let the tomatoes cook for 8-10 minutes.

Meanwhile beat the egg and cream together and keep aside.

Now add the chopped peppers, some salt, the cooled, cooked pasta & mix well. Add salt to taste. Once the pasta absorbs some heat & has got even coated with the sauce, add beaten egg and cream mixture and mix well. When the egg mixture begins to curdle a little add the crushed black peppercorns, chopped jalapeños, mix well and take off heat. The egg will get cooked by absorbing the heat from the pasta and the sauce.

Garnishing:
Garnish with chopped parsley.

Serving Suggestions:
Serve hot.

  1. Today I was badly craving for some creamy pasta but was too lazy to make white sauce. Came across this recipe and I made it for dinner. We loved it! 🙂 Got ready in less than 30 minutes and was gulped down in less than 10 minutes 😛 The jalapenos added an extra twist to the pasta.
