Chatpata Methi Aloo


K’s love for sabzi roti is much more than his love for authentic Iyengari food.. Oops I hope I don’t get to bear some brunt of his anger, for saying this..   

I wanted to prepare something a little different from the usual Aloo Methi. I love innovating. This did turn out yummy. The traditional Methi Aloo is always a welcome on our dinner table. Now I have a new twist to it. Such recipe’s are always a hit with K, I’m glad he loved it… 

Ingredients: ( Serves 2 )      Preparation Time: 20 mins
Potato – 2 medium sized, peeled and cubed
Garlic – 2 pods, finely chopped
Oninon – 1 medium sized, diced
Green Chili – 2, each slit into two
Cumin / Jeera Seeds – 1 tsp
Sugar – half a tsp
Methi leaves – half a bunch, chopped
Turmeric Pwd – a pinch
Lime – 1 slice
Garam Masala Pwd – half a tsp
Oil – 2 tbsp
Salt to taste

Method:
Heat oil in a frying pan. Heat set to medium. Once the oil is hot, saute the cumin seeds for half a minute.
Add the green chili’s and saute for a few seconds. Add the chopped garlic and saute for a few seconds. Once the aroma of garlic fills the place, add the diced onion and fry well. Add the turmeric pwd. Fry the onion till they start to turn a little brown.

Add the chopped methi leaves and fry. Add salt to taste.

Add the cubed potato’s and saute. Add a little water arund 50 ml.. turn the heat to low and close the frying pan and let the potato’s cook for around 5 minutes. Make sure they dont burn.

Once the potato’s are almost done, add the garam masala and the sugar. Mix well. Increase the flame back to medium and fry well. Fry till the raw flavour of the garam masala is lost and the potato’s get golden brown.

Alternatively you can add more oil initially and just keep frying instead of using water to cook the potato’s.

​Serving suggestions:
Squeese some fresh lemon juice and serve hot with some Roti’s or chapati’s along with some fresh yogurt on the side.

Can be had as a starter as well.
