Beetroot Raita


Beetroot is detested by many. I know of people who think beetroot is a vegetable which other than a salad cannot be of any other use.. They are wrong. This healthy vegetable has loads of uses along with the various recipes you can use it in.

This recipe uses, boiled Beetroot, chopped onions & green chilli’s in yogurt, garnished with chopped coriander and served chilled. Sounds interesting & yummy, it sure does to me if I had not eaten this before & I had just read the description I would sure have been waiting to try it out.

This is one of my personal favourites. Beetroot being one of my favourite vegetables may be the reason. A winner again among my family and relatives. I learnt this recipe from one of my aunts who lives in Mumbai (Bombay, India).

Ingredients: (Serves 3-4)     Preparation time – 10-15 mins​
– Beetroot – One medium sized
– Yogurt  – 500 gms
– Onion – 1 medium sized, chopped finely
– Green chillies – 1-2 chopped/sliced
– Coriander leaves – 3-4 sprigs chopped finely
– Salt to taste

Method:​
Steam and cook the beetroot, if required pressure cook in a cooker for 4-5 whistles. Peel the skin off once the beetroot is cooked and cut into small cubes and keep aside.
Beat the Yogurt and set aside.
Add the chopped beetroot, onions and chillies to the Yogurt.
Add salt to taste and mix well.

Garnishing:

Garnish with some chopped coriander leaves and serve. You can chill it in the fridge before serving.

Serving Suggestions:

Goes well with any flavoured Indian rice dishes like Biryani, Arisi Parappu Saadam etc.

  1. Prepared ‘Beet-root Raita’. Turned out very very yummy. Had it just like ‘Kosambri’. I agree it goes well with ‘Arsi-porappu saadam’ / Bitriyani. Will try that too some time.
