KPCC-6! Priyadarshini’s wonderfully illustrated Indonesian Salad recipe..

Wow.. we are at the 6th challenge here on Keli Paan.. time has just flown by.. I can’t believe that it is going to be 6 months since I started KPCC. It has been fun.. I’m sure all those who participated will agree as well.. :) 

You may be wondering what these illustrations are all about & where is the recipe?? Well this is the beauty of KPCC-6 & Priyadarshini Kedlaya who won KPCC -5. She has a wonderful food blog of her own called Sugarfree Sweetheart, do check it out for more such illustrated recipes..  :) 

This looks like a  wonderful, fun recipe & Priyadarshini agrees.. :). I’m blown by the flavours & its ingredients.. !

5th KPCC  Challenge – Sonal’s quick meal idea – Vegetarian Fried Rice with Pan Grilled Tofu a.k.a Bean Curd/Paneer Salad

At this time of the year, with everyone busy with Diwali preparations, I know its chaotic in every household, .. so the  ideal recipe was a vegetarian recipe….  Luckily for me, Sonal Gupta the winner of the previous challenge was a vegetarian… I explained to her what the previous 4 challenges have been.. There has been an omelette, a salad, a starter & then the one she won – a sweet-dish.. so a quick meal recipe would be the perfect recipe for this challenge.. Sonal has a blog of her own called – Simply Vegetarian 777. She has some lovely recipe’s on her blog. Do check it out. This is one of Sonal‘s quick meal ideas.. :)

Ingredients for Fried Rice:
Cooking Oil : 1 tbsp
Cooked Rice : 1 & 1/2 cups
Soy sauce : 1 tbsp – 1/2 cup, add as per your taste
Salt : to tatse
Black pepper powder : to tatse
Red onion : 1/2 cup
Ginger : 1 inch piece chopped
Garlic : 2 cloves chopped
Green onion : 1/4 cup
Bell pepper : 1/4 cup (any color)
Mixed vegetables : 2 cups, example beans, carrots, celery

Ingredients for Grilled Tofu/Paneer Salad:
Tofu/Bean Curd : 6-8 big cubes ( firm or extra firm kind)
Tomato (firm and meaty) : 6-8 big chunks as the size of tofu
Soy sauce : 1 tbsp
Tomato Ketchup : 1 and 1/2 tsp
Ginger : 1/4 tsp (grated)
Cilantro : 1 tsp chopped (optional)
Lemon juice to tatse
Party picks or tooth picks

Method for Stir Fry Rice:
Take a broad pan or wok. Add 1 tbsp oil to it. Heat the oil. Add onion, ginger and garlic to it. Sauté for a minute and then add mixed vegetables. sauté together for a minute. Add cooked rice and soy sauce. Mix well with a light hand. Cover the pan and let it cook for 2-3 minutes on low flame. The fried rice is ready.

Method for Grilled Tofu salad:
Mix soy sauce, grated ginger, tomato ketchup together and whisk well. Skew the tofu cubes and tomato chunks together in a toothpick or you can put them in a kebab skewer also.
Take a non stick pan. Put it on low-medium flame. Add the soy sauce mix in the pan and warm it up. When it heats up, add the tofu and tomato skewers in the hot sauce. coat them well and grill on all the sides for couple of seconds. Take them off and mix well with chopped cilantro/coriander and lime juice. A yummy side dish is ready.

I so wanted this event to be a blind challenge,… I wanted people to sign up & I email them the recipe..! Just for a change from the usual.. I post the recipe from the previous events winner. But none other than a friend was up for the blind challenge, guess people hate surprises these days..! Maybe in a while people will ask me to host a blind challenge.. looking forward to that day.. :)

4th Challenge – Pooja’s Diwali special dish – Kalakand Doodhi Sandwich

Pooja Tenginkai won KPCC -3. This is the recipe she sent in.

Pooja says – This sweet recipe is one of my favourite, freshly robbed from my mother in law’s treasure cook book. :), this sandwich is heavenly, the lovely flavours of roses infused in bottle gourd halwa. I’m sure all of you will love it & I hope this adds some more sugar to all your lives this Diwali.. :)

Ingredients for Kalakand:

½ litre  i.e around 2 ½ cups of whole milk

1 teaspoon vinegar

1/4th cup  sugar

Few drops of rose essence

Directions to make Kalakand:

To boiling milk add vinegar and let the milk continue to boil until it turns lumpy & the water begins to separate.  Drain the water and separate the lumpy milk. In another pan add this lumpy milk and sugar stir it until the mixture turns soft (semi-solid), now add the rose essence and cook it for 2 mins.

Ingredients for Doodhi halwa :

2 cups water

1 cup grated Doodhi (bottle gourd)

1 cup white sugar

2 teaspoon ghee i.e. clarified butter

1 teaspoon finely chopped almonds/badam

½ teaspoon Cardamom powder

Directions for Doodhi halwa:

Add grated Doodhi to water and bring the mixture to boil for 2 mins and then drain all the water. In a sauce pan add 1 teaspoon of ghee, Doodhi and sugar sauté it until the mixture vaporize and turns translucent, add chopped almonds and cardamom powder. Let the halwa cool down to room temperature.

To serve:

Sandwich doodhi halwa between kalakand layers and serve. Your yummy halwa sandwich is ready. With the festival of lights – Diwali around the corner, Pooja  says she could not have chosen a better recipe for the challenge.  I totally agree with her, its such a cool sweet dish idea for the festival for sure.. .. :)

3rd Challenge – Sibani’s Recipe – Pepper Cheese Mushrooms

Sibani Mohanty the winner of the 2nd challenge sent in her recipe for the 3rd challenge… This is one of her quick & yummy tasty treats when she has house parties… & it is always wiped clean… I have tried this out myself at her parties & it’s a real cheesy treat…

Ingredients: Serves (2-3)  Preparation Time: 15- 20 mins
Baby Button Mushrooms – 200 gms, each mushroom sliced into 2,
Garlic – 2 medium-sized cloves of (finely chopped)
Butter – 2 tbsp. of melted
Onions – 2 medium-sized, finely chopped
Green chillies – 2 sliced
Freshly ground pepper – 1 tsp
Passata/ Tomato puree – 2 tbsp/ 2 tbsp
Slice of cheese / 2-3 tbsp of grated cheese – 1 cut into smaller pieces
Sugar – A pinch of
Lemon juice – 1 tsp

Sauté finely chopped garlic in butter. Add the finely chopped onions and sauté them till they are golden brown. Add salt to quicken the process. Add the sliced chillies and add ground pepper (or more depending upon the spice level needed). Once the onions are done
add the tomato puree (in case there is no tomato puree then add 2 medium-sized tomatoes
finely chopped). Sauté the tomato’s till the raw flavours fade away.

Add mushrooms and mix them really well. Add salt for taste. Cook till the mushrooms are done. Add a pinch of sugar and lemon juice. Slice up the cheese slice into smaller pieces and add it towards the end. Once the cheese melts, mix it up well.

Serve hot as a starter.

2nd Challenge – Suman’s Recipe – Russian Salad

Suman Menezes was the winner of the 1st challenge.. this happens to be a winner & a favourite recipe in her family… always a hit at her parties ..

Ingredients: (Serves 2) Preparation Time: 15 mins
Chicken Breast – 200 gms
Red Apple – 1 large, finely chopped with the skin on
Tinned Pineapple – 3-4 slices, chopped in a similar way like the apple, if you plan to use fresh pineapple, use 1/4 of a large pineapple & kindly note that you may need to add sugar if the pineapple is sour..
Sugar – a pinch, if required
Juice from the Pineapple tin – 1-2 tsp
White vinegar/Extra virgin Olive oil – 1/2 – 1 tsp
Note: Use only one of them, either Vinegar or olive oil
Freshly ground black peppercorns – as per taste
Mayonaise – 1/2 – 1 cup
Parsley (optional) – 1/2 tsp of finely chopped leaves, I used curly leaves Parsley
Salt to taste

Boil and shred the chicken and keep aside (debone the chicken if pieces used) In a bowl put the chopped fruits, salt, sugar and olive oil. Add the chicken and mayonnaise. Mix well. Add a little more sugar if the fresh pineapple is sour. Do not add vinegar if olive oil is used. Keep it in the fridge for an hour and serve chilled.

1st Challenge – Peppered Broccoli omelette with Oriental flavours:

Ingredients: (Serves 1) Preparation Time: 10 mins
Eggs – 3
Red/yellow/green Pepper – 1/4 of a small-sized one, finely chopped
Broccoli – one cluster from it, finely chopped
Garlic – 2 medium-sized cloves, finely chopped
Spring onions – 2 whole, finely chopped
Chilli flakes – as per taste
Ground black pepper – as per taste
Light Soy sauce – 1 tsp
Hoisen Sauce (optional) – 1 tsp
Toasted Sesame oil/ any cooking oil of your choice – half a tsp
Salt to taste

Into a mixing bowl, break the eggs & beat them well. Next mix salt, chilli flakes with the chopped veggies & garlic, transfer them to the bowl with eggs, mix well.

Heat oil in a frying pan set to medium heat. Meanwhile when the pan is getting heated up add the hoisen sauce & soy sauce to the egg & veggie mixture. Mix well. Pour the mixture into the frying pan & evenly spread the veggies around if they are concentrated in one region. Reduce heat to low. Cover & cook for 2 minutes. Remove the lid & add some crushed black pepper around the omelette. Cover & cook till the top is cooked as well. I don’t flip the omelette, you can if you wish to. That is it.. & its ready.. :)
