Its been a cloudy day. K went out to get his car fixed & came back with some Tulips for me.. What a superb start to my day..
Sunday seem to be Strawberry Sundays for us. Last weekend I posted Strawberry Lassi & today I had to make pancakes, we always have a stock of strawberries at home so used them to make strawberry pancakes.
I always wondered how anyone could have anything sweet for breakfast. Having something sweet for breakfast was never my cup of tea… hence never ventured into trying my hands at making some pancakes. K wanted to try pancakes today & i’m glad I did, I loved them as well.
I got this basic pancake recipe from a friend. It seemed quick & simple. It was the right time… K’s weekly off, we woke up early for a change, yet when we ended up eating this it seemed like we were having pancakes for brunch thanks to my photo session.
Ingredients: (Serves 2 – makes 8 pancakes) Preparation Time: 15-20 mins
All purpose flour – 3/4 cup
Sugar – 1/4 cup
Baking powder – 1 tsp
Egg – 1, beaten
Milk – 1/2 cup
Vanilla essence – 1/2 tsp
Butter or oil for frying
Cooking oil – 1 tbsp
Salt – 1/8 tsp
In a mixing bowl, sift flour, sugar, baking powder and salt. In another bowl, mix the beaten egg, milk, cooking oil and vanilla essence. Add the wet ingredients to the flour mixture, and fold until blended.
Heat a fry pan/pancake pan. Set it to medium heat. Lightly grease the pan with some butter/oil, and pour the batter on the pan. Roughly about 1/3 cup measuring cup for each pancake. Cook pancakes until bubbles form on top Slowly lift the side to check if the pancake edges has begun to turn brown, if yes then flip the pancakes to cook through.
Tip: Remember to add the batter only when the pan is hot, else it will take time for the bubbles to form on the top & the underside will begin to burn.
Add some fresh strawberries on the top.
Pour some golden syrup or any syrup of your choice.
Finally add some cream.
The cream will melt away quickly as the pancakes will be hot. Enjoyy..! This seemed perfect for a sunday morning ..
